With two toddlers at home for the summer the most frequent words I hear are ‘I’m Hungry!’ I can’t complain, they both like to eat and their food choices are usually healthy. Planning and preparing their daily meals, plus snacks can be time consuming and I sometimes run out of ideas.
School will start soon and that will involve a different sort of planning. Here’s a list of our go to snacks; quick and easy to prepare! I prepare their snack lunchboxes in the morning and they nibble from them in between meals.
Crackers, fruit roll ups and raisins.
Cheddar cheese sticks.
Fruit – Blueberries, grapes, orange slices, apples, strawberries, peaches.
Vegetables – Roasted sweet potatoes, sugar snap peas, coloured peppers, tomatoes, cucumbers, baby spinach.
Bliss balls – Just mix in a food processor. 18 medjool dates, 1tbsp chia seeds, peanut butter, 1tsp vanilla extract, pinch of salt, 2tbsp melted coconut oil, 2tbsp cacao powder. Form into balls and roll in coconut flakes and place in fridge overnight.
Egg Muffins – Mix together a large handful of baby spinach, 60g feta cheese, 6 eggs, pepper to taste. Put in muffin cases and place in the oven on 180 degrees for 20 minutes or until they brown.
Falafel Balls – Drain and rinse chickpeas, 1/2 juice of lemon, 1 crushed garlic clove, 1/2 teaspoon ground coriander and cumin, 2 tbsp wholemeal flour, 1 tbsp olive oil, pepper to taste. Add everything in food processor until you get a thick consistency. Roll into small balls and lightly fry till they are brown on the outside.
Black Bean Brownies – Combine 1 can black beans (drained and rinsed very well) 2 tbsp cacoa powder, 1/2 cup oats, 1/4 tsp salt, 1/2 cup maple syrup, 1/4 cup melted coconut oil or vegetable oil, 2 tsp vanilla extract, 1/2 tsp baking powder. After mixing all ingredients in food processor add 1/2 cup chocolate chips. Bake in a preheated oven 180 degrees and let it set before cutting.
